I've encountered some very well entrenched units(usually infantry) in both cities and mountain passes and I'm struggling in trying to capture them. What is the best approach to use?

Elite/Veteran Infantry Division with 1 engineer, 1 artillery and 1 other specialist that gives attack, then set-piece attack. Try to do feints beforehand if at all possible. Follow up with determined infantry attacks. Accept the casualties; You'll get 2/3 back as stragglers anyways.

Feint attacks are my new best friend, particularly if you've specialized them down to costing 1 or 2 points apiece.

100% reliable suppression with zero risk creating ruins is definitely worth it.

Alternatively I believe a set piece attack with engineers are guaranteed (if I recall correctly) to reduce any entrenchment value to 0. I also notice the AI doesn't seem to entrench during the game so they won't dig in again if you dig them out once.

Yes, a setpiece attack with engineers is a wonder to behold.
I'm not so sure - I think I've seen the German AI entrench.

The Germans do indeed entrench, especially divisions in good positions like forests or cities that are a bitch to clear out when dug in.

A special HQ ability you get from upgrading your HQ's operation level to 2. In short takes time to set up and requires artillery, but is a reliable and low casualty way to flush out hard to kill targets.
