What is a set piece attack?

I've encountered some very well entrenched units(usually infantry) in both cities and mountain passes and I'm struggling in trying to capture them. What is the best approach to use?

Good tips ... thanks... especially the options during the deployment phase.

I'm playing the non-historical scenario in the Campaign (Italy). But to play this scenario you need a ton of fuel and only 2 trucks are provided. Is there a way to purchase trucks with Prestige?
