cant figure out when i will get additional attacks from unit

i see randomly both standard and vet/elite units wiping out an opposing unit and getting second or more attack turns. what is the rule here? when can i be sure that if i wipe out an opposing unit i will get additional attack moves? tnx

It's called "Overrun" and it's explained in the manual, under section 3.3. "Combat", subsection "Retreat and Overrun".
